Vanilla Pear Cocktail


● 3 Bartlett pears

● 1/4 cup sugar syrup

● 1 bowl cold water with lemon juice

● 1 inch minced ginger

● seeds scraped from vanilla pod

● 1/2 cup almond milk

● 3/4 cup vodka


● peel and core pairs, then cut into large chunks and place into bowl of water

● drain pears, then steam them until tender but still firm

● place pears in container, cover with plastic wrap, place them in refrigerator

● place pears in blender with half the sugar syrup, ginger, vodka, vanilla beans, and almond milk, then process until smooth

● transfer to container with ice cubes

● taste and add more syrup if necessary

● chill before serving.
