You really can't go wrong when serving candied sweet potatoes to your guests, and this is a very easy recipe to prepare.
Ingredients:
● 1 cup of brown sugar
● 1 cup sugar
● 8 medium sweet potatoes
● 1/4 cup butter
● 2 teaspoons vanilla extract
● 1/4 teaspoon salt
● 2 tablespoons cornstarch
● 2 tablespoons cold water
● Minced fresh parsley
Directions:
Combine the two sugars in a small bowl, and then use a greased 5-quart slow cooker to layer 1/3 of the sweet potatoes before sprinkling with the sugar mixture.
Repeat this for two other layers, then in a small bowl you can combine the salt, vanilla, and butter, which can then be drizzled over the potatoes.
Cover and cook them on a low heat for about two hours, or until the sweet potatoes are tender.
After this time, transfer the potatoes to a serving dish and pour the cooking juices into a small saucepan, bringing them to a boil.
In a small bowl, mix together the water and cornstarch, and then stir into a pan. Bring this mixture to a boil while constantly stirring, and allow it to cook until it gets thick.
Then you can spoon it over the sweet potatoes and serve with a sprig of parsley.
